WEEKLY MEAL PLAN #23
Finally after almost a month since the last meal plan, I can share with you a new one! This time on a Wednesday, just because I didn't do it on Monday. I have just finished dinner and I must say, if you only try one thing of this meal plan, it should be the aubergine cannelloni. Mum showed me the recipe after her trip to Andalusia and we cooked it together today. I have never been so full and happy before. There is something about spinach and cognac together with a pickled tomato marmelade and then parmesan, that just brings you in food heaven!
I will be enjoying this week all alone with my mum and we will be cooking and enjoying red wine and beer on the balcony all week!
Leftovers from last week: new potatoes, pointed cabbage, lettuce, apples, chicken meat balls, shredded cheese, bacon, eggs, bbq chicken
new potatoes in butter and dill, green salad with spinach, sugar peas, cucumber, avocado and lemon dressing and parmesan on top
red pointed cabbage and apple slaw with chicken meat balls
rice noodles with pak choi/Chinese cabbage and asian style bbq chicken
