WEEKEND MEAL PLAN.

Since Matt haven’t been home the first days this week I have been this little hibernating bear staying in bed almost all day until going to work. This means I have just been eating what ever leftovers there has been in the fridge and house and then I bought some ryebread and avocado for lunch.

Now Matt is home an I will then be doing a tiny bit of shopping so we can have some yummy meals in the weekend with a glass of wine or so. This is the first weekend in a very long time where we haven’t been doing a million things. I am going for a coffee with my friend on sunday and that is basically all. I call for a full on slumper weekend cause next weekend Matts mum and sister are visiting and then my whole family is coming for birthday dinner on the 8th. 

This is how I normally sort out my meal planning, so I will use everything in the fridge and not throw anything out because it has become too old.

 

Leftovers in the fridge to base my next meal plan on:

  1. 1/2 savoy cabbage 
  2. bean sprouts 
  3. carrots 
  4. feta

 

WEEKEND MEAL PLAN

THURSDAY 
Sty fry of savoy cabbage, bean sprouts and cucumber with chickpea noodles and sesame seeds 

FRIDAY
Braised Coconut Spinach with Chickpeas and Lemon

SATURDAY
Mince meat burger with spinach salad, cucumber, couscous and feta 

SUNDAY
Spaghetti with vegetarian Bolognese
