WEEKLY MEAL PLAN #12
I have had a busy weekend, holding my sister's hand when she got her first tattoo, been on bars and walked around the city. So it is a tired Sissel writing right now. This week is a very busy week as well, with lots of work and lots to be done.
On Friday I was invited to an interview to Kingston University, which means I will be going to London next week and it also means I have had to book tickets, which I didn't calculate in this month's budget. So we are running a bit tight on money and that can be seen in this weeks meal plan, which consists of quite a lot of food from our freezer (hey ho for saving food for rough times). I am really excited for the interview and to see the university and be back in London and to be with my dear Maria again. Exciting times ahead!
Here is this weeks meal plan:
potato cakes with green salad and pesto
pasta with roasted green beans, parmesan and avocado sauce
mash potato with peas and red onion
fish fingers with baked root veg chips and tartar sauce
frittata with potato and chorizo
kale and green stir fry with rice noodles and Thai dressing
