WEEKLY MEAL PLAN #13
I sincerely apologise for the lack of posts on the blog. I have had such unexpected past weeks, and I just need sleep!
So many things have needed reassessment, thinking and readjustment. And my brain and body aren't very good at coping with new things like that.
I am home now. And only got home super late Wednesday last week, then I have been straight to work every day since. It has been good to come back to my routines, but I really need to get back to a normal week with meal plans, no gluten (ouch my stomach hurts now) and a bit of peace and calmness.
So here is this weeks meal plan:
Leftovers from the last week: white cabbage, spinach, mushrooms
roasted cauliflower & coconut soup
carbonara with mushrooms and spinach
baked fish with white cabbage, mango, rocket, red onion and orange
baked sweet potato and bean, mango, feta salsa
fresh spring rolls with peas, peanuts, spring onion, spinach and avocado
red pepper and red bean hungarian paprika sauce with rice
leftover fried veg with bulgur and fried egg on top
